I don’t know why I have never attempted shortbread cookies before now. They are DE-LICIOUS! These decadent bites are already on my Christmas cookie list. Almond flour shortbread cookies are so easy too; only 4 ingredients! They are not too overly sweet and are the perfect pairing for that afternoon cup of coffee. They are gluten-free and the almond flour gives you that boost of protein and fat that you need in a fulfilling snack. So, it’s a win! I absolutely loved them and I got approval from my in-laws, so how can you go wrong there!
They taste great straight out of the oven.
But if you let them cool all the way, the sweetness really comes out.
I actually think that next time I prefer to leave out the salt that the recipe calls for. Now there are only three ingredients; almond flour, confectioners sugar, and butter! The only liquid in the recipe is softened butter, so it might seem like the cookie dough will be dry and crumbly. I used my KitchenAid stand mixer with the paddle attachment and the dough turned out perfect. I then rolled the cookie dough into little balls and placed them on the cookie sheet, flattening before putting in the oven. I used my index and middle finger together to flatten, thus the design, rather distinguished don’t you think!

Since there are so few ingredients, you can have a wonderfully delicious cookie in about 15 minutes. Hurry and make a batch! Then make sure to relax a spell!
