This past week we got our first zucchini off of the vine; just a small one. But if you have been harvesting squash in the garden, then you know that many more will follow.
What did I do with my very first zucchini? I made bread of course! I have been enjoying mouth watering zucchini bread since I was little. Here is our recipe:
1 1/2 c. all purpose flour 1 c. shredded zucchini
1 tsp cinnamon 1/4 c. cooking oil
1/2 tsp baking soda 1 egg
1/4 tsp baking powder
1/4 tsp salt
1 c. sugar
-grease loaf pan
-in a medium sized mixing bowl, whisk flour, cinnamon, baking powder and baking soda.
-in a separate medium sized bowl whisk sugar, shredded zucchini, oil and egg until incorporated. Fold in the dry mixture until it is moistened. Do not over-stir!
-bake in a 350 degree oven 45-60 mi
I use my kitchen aid stand mixer to whisk ingredients, then a spoon to fold together.
What is better than a piece of zucchini bread warm with butter? (it’s gotta be Kerrygold unsalted butter)Delicious! Pair that with a good cup of coffee and you have a summer breakfast treat that you will come to expect towards the latter part of June; my family does!
