-Prepare for the Autoimmune Protocol elimination diet-
This week I am supposed to be preparing for my AIP elimination diet that is going to start Monday after Easter. Well I am supposed to be ‘detoxing’ from certain foods such as sugar and coffee before I have to actually give them up for 30 or so days. And how is that going you ask; well I find myself in the state of mind where I want to have my ‘last’ meals of junk food and such. So I am not doing too well with the preparation. Come Monday there will be, for 30 days, no nuts or seeds(coffee is my biggest concern here), no dairy or gluten (I have already cut way back), and no sugar(have been refined sugar free for a while), and so on and so forth. Why am I doing this? I DON’T KNOW, CRAZY I GUESS!! Not really! I need to figure out what my psoriasis triggers are, so I need to know if I have a food intolerance. Am I going to do this, YES I AM AND I WILL GIVE 100% BECAUSE MY HEALTH AND WELLBEING IS IMPORTANT TO ME, more important than coffee. There, I said it!! Luckily I enjoy cooking and there are tons of recipes to be had on Pinterest. Just search AIP recipes. Anyway I’ve got AIP meals lined up, so I have hopefully set myself up for success. I’ve got some ideas of foods that may be triggers for my psoriasis flares, but this process will make those more clear. I’ll keep you posted on the progress!!

Well here’s the latest. original recipe from http://freshplanetflavor.com I added Vanilla and sprinkled the tops of the cookies with turbinado sugar and sea salt. Good cookie, but not really what I was looking for.
