One of my most favorite things about Spring and the warming weather is that I can go out in the morning with my cup of coffee and see this. I’ve tried to give you a somewhat panoramic view of my backyard. The cows and their calves were moved last week, but I love to watch them as well. There are plenty of birds, as well as turkey gobbles to hold my attention. I am so blessed! I could sit on the porch for hours at a time, slipping back inside only to refill my coffee cup.
While we’re on the subject of coffee, I wanted to tell you about some crazy good coffee I just picked up at Amazon. I have been on the hunt for k-cups that would fit in my Hamilton Beach Flex-brew one-cup coffeemaker. That sounds like a simple task, but I am also very picky about my coffee! Well, I think I have finally found it!! The k-cups are from Beantown Roasters; they fit well in my coffee maker and the coffee is perfectly suited to my taste. I am elated! This particular coffee maker is compact and ideal for those of us who have limited counter space. I had made up my mind to designate my countertop to my kitchen aid (artisan mini) and the coffeemaker. But then I read a post on Pinterest about having a special nook for coffee lovers. Then I tried a side table in my kitchen to hold just my coffee stuff. It has been about four months now and the ‘coffee bar’ idea is working out great. Just thought I’d let you know, in case you were dealing with limited space yourself!
Well now on to cookies! If you recall, last week I mentioned wanting to find a Paleo Sugar cookie recipe. Well here is the recipe I tried last week, the first of many. healthextremist.com had the coconut flour sugar cookie that I tried. I tweaked the frosting recipe from realfoodrn.com Here are my cookies, they did not come out as planned, not the cookie I was looking for. They had a great taste and I urge you to try them out.
